![]() ![]() ![]() This important thing is that the dough has multiple places to expand so you get a nice even, round, and beautiful boule. ![]() The patterns below are our favorites for a classic-looking boule, but feel free to get creative and make your own pattern. Whichever pattern you choose for your bread, don’t hesitate or second guess-for each slash use a single, decisive motion to cut at least ½" into the dough (remember, it can smell fear, so just go for it). (When this happens, don’t throw it away-it’s still sharp enough to score duck or pork skin, or shave paper-thin slices of garlic and chives, like a hot knife through butter). Lame blades can dull relatively quickly, so after slashing several loaves the blade won’t slice through the dough with tremendous ease. Our Test Kitchen loves Primal Kitchen Company's black walnut lame, which comes with four extra blades. It is far safer and more convenient to handle a lame than a double-sided razor or an ordinary knife, because of its convenient handle. As a result, lames are an essential tool for bakers when it comes to intricate scoring tasks. If you get decide to invest in a lame, get one with replaceable razors. Since it’s so lightweight, there is less chance of it dragging on the breads surface. These tools can be a little hard to find, so if can’t get your hands on one, we recommend using a razor blade taped to a popsicle stick. You need a truly razor-sharp edge to make a clean cut even a sharp paring knife will drag as it moves through the wet dough. Nice small leather pouch covers blade to prevent any incidental damage from edges of the blade and you.You don’t need a specialty lame (French for “blade”) to make professional-level bread at home, but it certainly helps in creating those telltale slash marks. Super sharp double-edged blades are easy to replace and easy to turn each blade around so you can use all 4 corners of it before having to change blades. 10 BLADES, WOODEN STORAGE BOX, BLADE COVER INCLUDED- Storage box makes it safer compared to having it floating around in a drawer if you happen to forget it is in there, at the same time protecting the blade for re-use and keeping it clean.UNLIKE OUR COMPETITORS – We do not have three rings at the end of our handle, this prevent dough flour from drying and sticking inside the rings, preventing a stressful messy bread lame cleanup (use whisk style image and have photo taken of normal color with rings and your own lame showing no rings).Once you get your hand on it, it becomes so easy to use, makes very neat precise scoring, a great little tool for a baker! BEAUTIFULLY CRAFTED & WELL MADE – Made of good quality wood and handle design makes it easy to use without getting cut.Helps you make smooth cuts on the top of the loaf and so much easier to use than a bare blade on a wooden coffee stirrer GIFT IDEAS FOR BAKERS: WORKS WELL & EASY TO USE – Handle is shaped to fit and feel great in your hand to give complete control with your slashes - making your sourdoughs look absolutely beautiful.Cuts so much better than trying with even a very sharp knife. GIFTS FOR BAKERS: WORKS GREAT SCORING SOURDOUGH – Nice clean deep slices in the dough makes your bread look like it came from the bakery, makes homemade bread look professionally made and look amazing. ![]()
